Please, explain the Virgin Birth to me. I've been told that if the Spirit of G-d covered Mary and made her pregnant, then G-d had to have committed adultery for impregnating a betrothed woman...and, of course, He would never do that. Please, explain.

What you have been told, quite honestly, is ridiculous.
The virgin birth account described in the Bible is not something akin to Greek mythology where gods cohabit with each other or with human beings. In other words, the Spirit didn't have relations with Mary. Rather, the Sprit of God "covered" Mary in the sense that God came upon her and miraculously placed the baby in her womb. No cheating, no adultery, just a grand miracle which was an echo of an earlier event in Israel's history when another young girl became pregnant, under unusual circumstances, in order to deliver a baby that would symbolize salvation to the Jewish people (see Isaiah 7, especially verse 14).
